For the past eleven years executive chef Etsuko Needham and her husband Peter have worked passionately to provide Bistro Sakana guests with a unique Japanese dining experience. The result is a restaurant that is refreshing and unique, a product of their differing cultural backgrounds and experiences.
With a firm foundation in Japanese culinary tradition and a passion to explore new territory, Etsuko continues to build on Bistro Sakana innovations, such as the use of brown rice in sushi, and unique Japanese dishes with Italian and French influences.
Also featured is Vancouver’s largest and most exclusive list of premium cold sake, served by the glass from the 1.8L bottles native to Japan. An extensive list of wine & beer is also available, as well as a full high-end sipping bar.
